Go up before the sun does

Spend the sunset on the mountain and the sunrise in the air, and let the rest of the trip be unhurried. That is a stronger use of a short romantic stay than trying to also squeeze in a full temple circuit and a spa day.

November to February gives the clearest skies for both the balloon flight and the Doi Suthep view. The February to April burning season can haze out the valley view entirely, so shift dates if either of these is the whole point of the trip.
